The 2011 harvest marks a departure from our traditional winemaking methods of Gewurztraminer, toward a new, popular style. With our Muscat Canelli new style, "Moscato", gaining popularity, we decided to try the same technique in the making of our Gewurztraminer. Similar to Moscato, we stopped the fermentation of this wine and bottled it earlier than we normally would. These actions allow us to keep a lot of the natural sweetness from the grapes and maintain a slightly lower alcohol. In addition, we retain some of the fermentation flavors which contribute to the incredibly aromatic nose and slight spritz to the wine. Like our previous versions, this Llano Gewurztraminer is still an excellent complement to Mexican and Thai dishes containing spice and heat.
